Sourdough Buttermilk Pancakes… Why Not!

Oh my… it all started with Clive, and he’s percolating nicely. So far… he’s become a loaf of bread and this morning… sourdough, buttermilk pancakes.

Yum. I used a recipe on line… Grandma’s sourdough pancakes and substituted buttermilk for the milk in the recipe.

I cut it in half, used a bit less sugar and substituted buttermilk for the regular milk. Why not I say… As it is sourdough you have to let it sit overnight at room temp to ferment a bit which also thickens it. I added some water in the morning to get it to a better consistency for pancaking… the results were excellent! Served with butter and warmed Canadian maple syurup.

Just about ready to flip…
Flipped a bit early, but that’s OK… that’s OK..
I flipped them back for about 60 seconds and
that was that. Oooo were they yummy.

I made 8 pancakes, 4 each… not too many, not too few… just right. Not enough to induce pancake stupor.

What’s your sourdough starter been up to?

  1. My sourdough waffles were great.  I cut the recipe in 1/2 and it made one scant waffle (4 sections) for both of us. However, I tossed my sourdough bread mix this evening.  It was far too wet, felt like slime,  and didn’t really rise while proofing today, stuck to everything and I couldn’t get it to stay in a dough ball form, and so I will start over with a different version tomorrow. Perhaps my sourdough starter isn’t quite ready for prime time.
